Sweetcorn Fritters

What you'll need

For the Fritters
  • 250 ml cake flour
  • 15ml baking powder
  • 1 egg
  • 1 tin (410g) sweet corn
  • Salt & pepper
  • Little chopped green pepper
  • Little basil leaves, chopped
  • Oil to fry
  •  
For the Garnish
  • 150ml mascarpone
  • 3 roasted tomatoes, sliced
  • 10 rushers bacon, grilled
  • Fresh rocket

What to do
  • Mix all the ingredients to make the fritters and set aside.
  • Cut each bacon rushers into 3 pieces.  Heat a shallow pan with a little oil in on top of the stove.  Curl and twist the bacon, then place it into the hot pan to fry. (try to keep the curl and twisted shape)  Remove and drain oil of on paper towel.
  • Slice the tomatoes and fry in the same pan with a little butter, season with a little salt and pepper.  Try not to break the tomato slices.  Remove from heat and keep warm aside
  • Use the same shallow pan and heat more oil in it.  Fry a few spoonfuls of the batter in the hot oil until cooked inside and golden brown on both sides. (be careful that the oil is not too hot, otherwise it will burn) Remove and drain on paper towel.
  • Sprinkle 4 side plates with finely chopped parsley.  Spread mascarpone on each fritter, stack with tomato bacon and garnish with rocket.
